Steak with Sage, Brie and Balsamic Tomatoes

 Ingredients:
8 x 175g lean rump or sirloin steak
8 slices rustic country bread
8 tbsp fruit chutney
100ml olive oil
4 garlic cloves, peeled and finely sliced
Bunch fresh sage, a few leaves reserved for garnish
200g Brie, thinly sliced
For the balsamic tomatoes:
16 medium sized tomatoes
100ml balsamic vinegar
120ml extra virgin olive oil
Sea salt
Freshly ground black pepper

Method:
1. For the tomatoes, cut in half, and drizzle over the vinegar, oil and seasoning. Roast in a hot oven for 20 mins.

2. Lightly grill the bread. Spread with some fruit chutney.

3. Meanwhile, heat the olive oil in a pan and fry the garlic and the sage leaves gently for 1 minute. Spoon over the bread.

4. Season the steaks and cook according to preference, in hot oil. Arrange the steaks on the bread slices. Top the steaks with the sliced brie.

5. Grill until the cheese melts. Season with black pepper and garnish with the remaining sage leaves.

To serve: Serve immediately with the balsamic tomatoes.
